Harvest Chicken Salad: Quick and Easy Meal Prep

I’ve been craving my Harvest Chicken Salad so I made some for this week. I actually love it for breakfast which might be super weird but it’s true. The craisins and almonds add the perfect amount of sweet and crunch. Love it!

I honestly am not sure how much chicken I cooked; I know at least 2lbs. So just know the chicken is slightly estimated.

Harvest Chicken Salad

2-3lbs cooked chicken
1 cup plain greek yogurt (I used Costco Store Brand)
1/2 cup avacado oil mayo (Better Body Foods) or (I might try this next time)

1 cup craisins
1 cup diced celery
3/4 cup sliced almonds
salt, mustard and honey to taste

My favorite think to do with this harvest chicken salad is to add finely chopped tart apple. I didnt in this recipe because my apples had turned smooshy. However! IF you add some tart apple to this, I think it takes it over the top!

**An important note about this and literally any recipe ever. YOU ARE YOUR OWN FOOD EXPERT. If you would rather use all mayo and no yogurt, or vice versa, go for it! If you would rather omit almonds…you are the master of your seas. You can make adjustments to this, and any recipe ever to fit your family.**

Mix it all up and you’ve got an affordable, protein packed snack or meal. I add it to a wrap if I’m needing carbs or over greens…or straight outta the fridge. Either way it won’t disappoint!

I’ve been on a mission to get more protein into my diet. The days I don’t get enough, I know it for sure because my blood sugar will be unstable, and I get super tired in the afternoon.

I tend to find something that works, and then eat that thing until I cannot stand it any longer. Not to the point of a taste aversion, but to the point that “Im over this.” I like to think about my food once a week, meal plan, shop and then be on auto pilot. Ive been able to spice it up a bit with this idea I got from Lillie Eats and Tells. In this post she shares her method for making an egg wrap extra delicious. I’ve made various versions of this. I couldn’t find Crepini near us, and we don’t have a Trader Joes so I bought Egg Life Wraps. Our local Aldi and Walmart carry them but you could grab them here on Amazon.

I’ve added Romain lettuce and chicken salad to an egg wrap and it was the perfect amount of crunchy texture!
